These Blueberry Cream Cheese Bars have a buttery oat crumble, a smooth and creamy filling, and bursts of tart, juicy berries in every bite. They’re easy to make, perfect for sharing, and bake up beautifully with layers of texture and flavor. Great for picnics, parties, or a simple dessert at home!
3/4 cup butter, softened
2/3 cup granulated sugar
2/3 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups all-purpose flour
1 1/3 cups quick oats (uncooked)
8 ounces cream cheese, softened
1 (14 oz) can sweetened condensed milk
1 teaspoon vanilla extract
1 egg yolk
1 cup blueberries (fresh or frozen)
(You can also use raspberries!)
Heat oven to 350°F (175°C).
Line a 9×13-inch pan with parchment paper or coat with nonstick spray.
In a large bowl, beat together the softened butter, sugar, and brown sugar.
Mix in the baking soda, salt, flour, and oats until combined.
Press half of this mixture firmly into the bottom of the prepared pan.
Bake for 13 minutes.
In another bowl, stir the cream cheese until smooth.
Gradually whisk in the sweetened condensed milk until fully blended.
Add the vanilla and egg yolk; mix until smooth.
Pour the cream cheese filling over the warm baked crust.
Sprinkle the blueberries evenly on top.
Crumble the remaining oat mixture over the berries and gently press it down.
Bake for 20–25 minutes, or until the edges are golden brown.
Let the bars cool completely.
Chill in the refrigerator before slicing for clean cuts.
Store leftovers in the fridge.
If using frozen blueberries, do not thaw—they’ll release less liquid.
Press the bottom crust firmly so the bars hold together well.
For extra flavor, add 1/2 teaspoon lemon zest to the filling.
These bars slice best when fully chilled.
