It’s easy to make, kid-friendly, and simple to customize with your favorite cheeses or add-ins.
1 lb ground beef
2 cups uncooked macaroni
2 cups shredded cheddar cheese (divided)
1/2 cup diced onion
1/2 cup breadcrumbs
1 large egg
1/4 cup milk (for meatloaf)
2 tbsp butter
2 cups milk (for cheese sauce)
2 tbsp flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dry mustard
Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
In a large bowl, combine ground beef, diced onion, breadcrumbs, egg, 1/4 cup milk, salt, and pepper. Mix gently until just combined.
Press the meat mixture evenly into the prepared baking dish.
Bake for 20 minutes.
While the meatloaf bakes, cook the macaroni according to package instructions. Drain and set aside.
To make the cheese sauce, melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
Gradually whisk in 2 cups of milk, stirring constantly until thickened.
Season with paprika, dry mustard, salt, and pepper. Stir in most of the shredded cheese until smooth and melted.
Combine the cooked macaroni with the cheese sauce.
Remove the meatloaf from the oven and spread the mac and cheese evenly over the top. Sprinkle with the remaining cheese.
Return to the oven and bake for 25 minutes, or until bubbly and lightly golden on top.
Let rest for a few minutes before slicing and serving.
Extra cheesy: Mix in mozzarella or Monterey Jack with the cheddar.
Add veggies: Stir cooked peas, broccoli, or spinach into the mac and cheese.
More flavor: Add garlic powder or a splash of Worcestershire sauce to the meatloaf mixture.
Make ahead: Assemble the casserole a few hours ahead and bake when ready.
