This Texas Roadhouse Roadkill recipe is a comforting, steakhouse-style classic inspired by the popular dish from Texas Roadhouse. Juicy hamburger steaks are pan-seared, then smothered with buttery onions, savory mushrooms, and melted Monterey Jack cheese. It’s hearty, flavorful, and perfect for a cozy family dinner that feels like eating out—without leaving home.
2 lb ground beef
1 tbsp Worcestershire sauce
1 tsp seasoning salt
1 large egg, beaten
½ tsp black pepper
1 tsp salt
1 large onion, sliced
1 tbsp butter
8 oz sliced mushrooms
6 oz shredded Monterey Jack cheese
Preheat the Oven
Preheat your oven to 350°F (175°C).
Prepare the Patties
In a large bowl, gently mix the ground beef, Worcestershire sauce, seasoning salt, egg, salt, and pepper. Do not overmix.
Form the mixture into 4 patties and refrigerate while preparing the toppings.
Cook the Onions and Mushrooms
Melt the butter in a large skillet over medium-high heat.
Add the sliced onions and sauté for 3–4 minutes, stirring occasionally.
Stir in the mushrooms, season lightly with salt and pepper, and sauté for another 3–4 minutes until soft and lightly browned.
Remove from the skillet and set aside.
Brown the Patties
In the same skillet, add the beef patties and cook for 2–3 minutes per side, just until browned.
Bake
Transfer patties to a baking dish. Spoon the onion and mushroom mixture over each patty.
Bake for 8–10 minutes, or until the patties are cooked through.
Add Cheese & Serve
Top each patty with shredded Monterey Jack cheese and return to the oven for 1–2 minutes, until the cheese melts.
Serve warm and enjoy.
Juicier patties: Use ground beef with a little fat (80/20 works great).
Extra flavor: Add a splash of beef broth to the skillet after browning the patties.
Cheese swap: Colby Jack or provolone also melt beautifully.
Serving ideas: Pair with mashed potatoes, steak fries, or buttered green beans.
