Taco Mac is the best of two comfort-food worlds combined: creamy, cheesy mac and cheese mixed with bold taco-seasoned beef and juicy tomatoes. It’s quick, filling, and packed with flavor—perfect for busy weeknights or when you want something fun and satisfying with minimal effort.

Ingredients

  • 1 lb ground beef

  • 1 packet taco seasoning

  • 1 cup water

  • 2 cups elbow macaroni

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 can diced tomatoes (14.5 oz, undrained)

  • ½ cup sour cream

  • ¼ cup chopped green onions

  • 1 tablespoon olive oil

  • ½ cup milk

Instructions

  • Heat a large skillet over medium-high heat and add the ground beef.

  • Cook the beef, breaking it up with a spoon, until browned and fully cooked.

  • Drain excess fat if needed and return the skillet to the heat.

  • Stir in the taco seasoning and water. Simmer for about 5 minutes until slightly thickened.

  • Meanwhile, bring a large pot of salted water to a boil.

  • Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

  • In the same pot, heat olive oil over medium heat.

  • Add diced tomatoes (with juices) and cook for 2–3 minutes, stirring occasionally.

  • Stir in the cooked macaroni and taco-seasoned beef until well combined.

  • Add milk and mix evenly.

  • Stir in cheddar and mozzarella cheese until melted and creamy.

  • Add sour cream and stir until smooth and fully incorporated.

  • Remove from heat and let rest for 5 minutes.

  • Garnish with chopped green onions and serve hot.

Notes

  • Add crushed tortilla chips on top for crunch.

  • Swap ground beef for ground turkey or chicken for a lighter version.

  • Like heat? Add jalapeños or hot sauce.

  • For extra creaminess, stir in a little cream cheese.
