Strawberry Cinnamon Rolls (Soft, Fluffy & Bakery-Style Homemade Recipe)

These Strawberry Cinnamon Rolls are the ultimate homemade comfort bake. Made with soft, fluffy brioche-style dough, a sweet homemade strawberry filling, and finished with a creamy strawberry cream cheese glaze, these rolls are tender, fruity, and perfectly indulgent. Dough

  • 260 ml (1 cup) warm milk

  • 10 g (1 tablespoon) instant dry yeast

  • 540 g (4¼ cups) all-purpose flour

  • 65 g (⅓ cup) granulated sugar

  • 1 teaspoon salt

  • 1 large egg, room temperature

  • 80 g (⅓ cup) unsalted butter, very soft

Strawberry Filling

  • 250 g fresh or frozen strawberries

  • 50 g (¼ cup) granulated sugar

  • Juice of ½ lemon

Strawberry Cream Cheese Glaze

  • 100 g (½ cup) cream cheese, softened

  • 40 g (3 tablespoons) unsalted butter, softened

  • 60 g (½ cup) powdered sugar

  • 1 teaspoon vanilla extract

  • 2 tablespoons cold strawberry puree

Instructions

1. Make the Strawberry Filling

  1. Add strawberries, sugar, and lemon juice to a saucepan.

  2. Cook over medium heat for about 10 minutes, stirring occasionally until thick and jam-like.

  3. Blend until smooth using an immersion blender or food processor.

  4. Cover and refrigerate until completely cooled.


2. Prepare the Dough

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast.

  2. Add warm milk, egg, and softened butter.

  3. Knead using a dough hook for 5–7 minutes until smooth and elastic.

  4. Cover dough and let rise in a warm place for about 2 hours, or until doubled in size.


3. Roll and Fill

  1. Roll dough on a lightly floured surface into a 40 × 30 cm (16 × 12 inch) rectangle.

  2. Spread cooled strawberry filling evenly, leaving a small border.

  3. Roll tightly into a log from the long edge.

  4. Slice into 12 equal rolls using a sharp knife or dental floss.


4. Second Rise & Bake

  1. Arrange rolls in a greased 9×13-inch baking dish.

  2. Cover and let rise again for 30–60 minutes until puffy.

  3. Preheat oven to 180°C (350°F).

  4. Bake for 20–25 minutes, until lightly golden and soft.

Allow rolls to cool slightly.


5. Prepare the Glaze

  1. Beat cream cheese, butter, powdered sugar, vanilla, and strawberry puree until smooth and creamy.

  2. Adjust thickness with extra sugar or a splash of milk if needed.


6. Finish and Serve

Spread glaze generously over warm rolls so it melts into the layers. Serve warm and enjoy!
