If you love the warm, cinnamon-sugar goodness of churros and the soft, fluffy comfort of pancakes, these Spanish Churro-Inspired Pancakes are about to become your new favorite breakfast. They’re lightly crisp on the outside, tender on the inside, and finished with a generous coating of sweet cinnamon sugar—perfect for slow mornings, brunch with friends, or a special weekend treat. Best of all, they come together quickly with simple pantry ingredients.
1 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
½ cup cinnamon sugar (for topping)
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, combine the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Heat a non-stick skillet over medium heat and lightly grease it.
Pour about ¼ cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
Remove from the skillet and immediately sprinkle generously with cinnamon sugar.
Repeat with remaining batter. Serve warm and enjoy.
Extra Crispy Edges: Cook pancakes slightly longer on each side for a lightly crisp exterior.
Even Cooking: Keep the heat at medium to prevent burning while ensuring a fluffy center.
More Churro Flavor: Add a pinch of cinnamon directly into the pancake batter.
Serving Ideas: Drizzle with honey, maple syrup, or chocolate sauce, or add fresh fruit on the side.
