These Sausage Egg Breakfast Roll-Ups are a fast, savory breakfast made with flaky crescent dough, fluffy scrambled eggs, melty cheese, and juicy sausage links. They’re perfect for busy mornings, meal prep, or a fun weekend breakfast everyone will love.
6 breakfast sausage links (fully cooked)
4 large eggs
1 tablespoon milk
Salt and pepper, to taste
1 tablespoon butter
1 cup shredded cheddar cheese
1 can (8 oz) refrigerated crescent roll dough
Preheat the Oven
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the Eggs
In a bowl, whisk together eggs, milk, salt, and pepper.
Scramble the Eggs
Melt butter in a skillet over medium heat. Add the egg mixture and scramble gently until just set. Remove from heat.
Assemble the Roll-Ups
Unroll crescent dough and separate into triangles.
Spoon scrambled eggs onto each triangle, sprinkle with cheese, and place a sausage link on top.
Roll and Bake
Roll up each triangle starting from the wide end. Place on the prepared baking sheet.
Bake for 15–20 minutes, or until golden brown.
Serve
Serve warm and enjoy!
Don’t overcook the eggs: Slightly soft eggs finish cooking in the oven and stay fluffy.
Cheese swaps: Try mozzarella, Colby Jack, or pepper jack for variety.
Add-ins: Finely diced bell peppers or green onions can be mixed into the eggs.
Make-ahead: Assemble, refrigerate overnight, and bake fresh in the morning.
Freezer-friendly: Bake, cool, and freeze. Reheat in the oven or air fryer.
