Sausage, Egg, and Cheese Breakfast Roll-Ups

These Sausage, Egg, and Cheese Breakfast Roll-Ups are the ultimate grab-and-go morning meal. Made with flaky crescent roll dough, fluffy scrambled eggs, savory sausage, and melty cheese, they deliver a full breakfast wrapped into one warm, golden roll.   • 5 large eggs

  • 1 can (8 oz) refrigerated crescent dinner rolls

  • 8 sausage links (fully cooked or breakfast sausage)

  • 4 slices Cheddar cheese, halved

  • Salt and pepper, to taste

Instructions

1️⃣ Preheat the Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or leave ungreased.

2️⃣ Prepare the Eggs

In a small bowl, beat the eggs and set aside 2 tablespoons for brushing the tops later.
Scramble the remaining eggs in a skillet over medium heat until just set. Season with salt and pepper. Remove from heat and let cool slightly.

3️⃣ Prepare the Dough

Unroll the crescent dough onto a clean surface and separate it into 8 triangles along the perforated lines.

4️⃣ Add the Cheese

Place half a slice of Cheddar cheese onto each crescent triangle.

5️⃣ Add Eggs and Sausage

Spoon a small amount of scrambled eggs onto each triangle.
Place one sausage link on top of the eggs.

6️⃣ Roll Them Up

Starting at the wide end, gently roll the dough toward the pointed tip, enclosing the filling. Tuck in the sides slightly as you roll to keep everything inside.
Place each roll-up seam-side down on the baking sheet.

7️⃣ Brush and Season

Lightly brush the tops with the reserved beaten egg for a golden finish. Sprinkle with a pinch of salt and pepper.

8️⃣ Bake

Bake for 15–18 minutes, or until golden brown and flaky.

9️⃣ Serve

Notes

  • Don’t overfill the dough—too much filling can cause leaks while baking.

  • If using raw sausage, cook it fully before assembling.

  • Let scrambled eggs cool slightly before assembling to prevent the dough from becoming soggy.

  • For extra flavor, sprinkle a little garlic powder or everything bagel seasoning on top before baking.

  • Reheat in an air fryer for 3–4 minutes to restore crispiness.
