These No-Bake Cookie Dough Bites are a fun treat that tastes just like classic cookie dough—without any baking! Perfect for parties, snacks, or whenever a sugar craving hits. They’re soft, chocolatey, and dipped in melted chocolate for an extra delicious finish.
2 sticks (227 g) unsalted butter, softened
¾ cup (150 g) white sugar
¾ cup (165 g) light brown sugar
2 cups (250 g) all-purpose flour (heat-treated – see tips)
⅓ cup milk
1 teaspoon salt
1 teaspoon vanilla extract
⅔ cup (120 g) mini chocolate chips
200 g milk or dark chocolate (for coating)
Beat the softened butter, white sugar, and brown sugar together until light and fluffy.
Mix in the vanilla extract.
Add the flour and salt, stirring until a dough forms.
Gradually add the milk until the dough reaches your preferred texture.
Fold in the mini chocolate chips.
Scoop out small portions (heaped teaspoons) and roll into balls.
Place the dough balls on a parchment-lined tray and refrigerate while melting the chocolate.
Melt chocolate in a microwave-safe bowl in 30-second intervals, stirring between each.
Continue until smooth and fully melted.
Dip each ball into the melted chocolate, letting the excess drip off.
Place onto a lined tray to set.
Chill in the refrigerator for faster setting.
Heat-treat flour for safety: Spread flour on a baking sheet and bake at 350°F (175°C) for 5–7 minutes, or microwave in 30-second bursts until it reaches 165°F (74°C).
Texture control: Add more milk for softer dough; reduce for firmer dough.
