When chocolate cravings strike, these No-Bake Brownie Bites come to the rescue! Rich, fudgy, and dipped in smooth chocolate, they deliver all the deliciousness of brownies — without ever turning on the oven (well… just enough to make the flour safe to eat!). Perfect for parties, gifting — or sneaking one when that midnight craving hits.
½ cup brown sugar, packed
¼ cup granulated sugar
½ cup unsalted butter, softened (1 stick)
1 teaspoon vanilla extract
¾ cup all-purpose flour, heat-treated
⅓ cup cocoa powder
½ cup mini chocolate chips
8 oz German sweet chocolate, chopped (for dipping)
Preheat your oven to 350°F (177°C). Spread flour evenly on a baking sheet.
Bake for 5 minutes, then let cool completely before using.
Beat brown sugar, white sugar, and softened butter together until creamy.
Mix in the vanilla extract.
Add cooled flour + cocoa powder and blend until the dough forms a soft ball.
Fold in mini chocolate chips using a spatula.
Roll dough into 1-inch balls and place on a parchment-lined baking sheet.
Refrigerate for 20 minutes to firm up.
Melt German chocolate in a double boiler
—or microwave in 20-second intervals, stirring often.
Dip each chilled brownie bite into melted chocolate, letting excess drip off.
Return to the baking sheet.
Allow the chocolate to set — refrigerate briefly to speed it up.
Enjoy once firm!
Cool flour fully before mixing — warm flour melts butter!
Add 1–2 tablespoons of milk if dough seems too dry to roll.
Top with sprinkles, sea salt, or white chocolate drizzle for a fun finish.
