Ingredients

Scale

For the Soup

  • 1 lb ground beef

  • 3 garlic cloves, finely minced

  • ½ yellow onion, diced

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp dried basil

  • ½ tsp dried oregano

  • 1 tsp kosher salt (plus more to taste)

  • Freshly ground black pepper, to taste

  • 1 can (14 oz) crushed tomatoes

  • 32 oz chicken broth (more if needed)

  • 1 cup water

  • 2 tsp tomato paste

  • 6 oz lasagna noodles, broken into pieces

  • 1 cup frozen chopped spinach

  • ¼ cup heavy cream

For Serving

  • Ricotta cheese

  • 4 oz mozzarella cheese, sliced

  • Parmesan cheese (optional)

Instructions

  • Brown the beef:
In a large pot over medium-high heat, add the ground beef. Cook until fully browned, breaking it up as it cooks. Drain excess grease if needed.

  • Add aromatics:
Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and black pepper. Cook over medium-low heat for about 5 minutes, stirring often, until onions soften and the mixture is fragrant.

  • Build the soup:
Stir in crushed tomatoes, chicken broth, water, and tomato paste. Add the broken lasagna noodles and mix well. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes, until noodles begin to soften.

  • Finish the soup:
Stir in frozen spinach and heavy cream. Simmer uncovered for 5 more minutes until creamy and heated through. Taste and adjust seasoning if needed.

  • Serve:
Place a slice of mozzarella cheese in each bowl. Ladle hot soup over the cheese so it melts. Top with a dollop of ricotta and a sprinkle of parmesan if desired.

Notes

  • Break noodles evenly so they cook at the same rate.

  • Don’t overcook the pasta: It will continue to soften as the soup sits.

  • Extra broth: Add more chicken broth if you prefer a thinner soup.

  • Make it richer: Add extra cream or a little cream cheese for a thicker texture.

  • Storage: Store leftovers in the fridge for up to 3 days. Add broth when reheating.
