McGriddle Bites (Sweet Sausage Mini Muffins)

These McGriddle Bites are the perfect grab-and-go breakfast for busy mornings! They’re made with fluffy pancake batter, savory breakfast sausage, melty cheddar cheese, and a touch of maple syrup for that sweet-and-salty McGriddle flavor—baked into adorable mini muffin bites that kids and adults love.

Ingredients

For the Muffins

  • 1 pound breakfast sausage (regular pork sausage works best)

  • 2 cups Hungry Jack Pancake Mix (make sure it only requires water)

  • 1 cup water (filtered or tap)

  • ¼ cup maple syrup (pure maple syrup preferred)

  • 1 cup cheddar cheese, shredded (best from block cheese)

Optional Add-Ins

  • ¼ cup diced jalapeños (spicy kick!)

  • ½ cup blueberries (sweet fruity contrast)

Instructions

1) Preheat & Prep

Preheat oven to 400°F (204°C).
Grease a mini muffin tin with nonstick spray or butter.


2) Cook the Sausage

In a skillet over medium heat, cook breakfast sausage until browned and crumbled (5–7 minutes).
Drain excess grease and set aside.

✅ Tip: Let the sausage cool for 2–3 minutes so it doesn’t melt the cheese instantly.


3) Make the Batter

In a large mixing bowl, combine:

  • pancake mix

  • water

  • maple syrup

Stir just until combined (don’t overmix).


4) Add Sausage & Cheese

Fold in:

  • cooked sausage

  • shredded cheddar cheese
    (+ jalapeños or blueberries if using)


5) Fill Muffin Tin

Spoon batter into each muffin cup until about ¾ full.

✅ Tip: A mini cookie scoop makes this super fast and mess-free.


6) Bake

Bake 12–15 minutes, or until:

  • tops are golden brown

  • toothpick comes out clean

Cool slightly and serve warm.

Optional: Serve with extra maple syrup for dipping

Notes

  • Don’t overmix pancake batter → keeps bites fluffy.

  • Shred cheese from block → melts better and tastes richer.

  • If your sausage is salty, use slightly less seasoning or choose mild sausage.

  • Add blueberries carefully (don’t crush them while mixing).
