This Marry Me Pasta is a rich, creamy, and comforting meatless pasta dish inspired by the famous “marry me” flavor profile—garlicky, cheesy, and loaded with sun-dried tomatoes. It’s elegant enough for date night but easy enough for a weeknight dinner. One bite of this silky, flavorful sauce coating tender noodles, and you’ll understand why it’s earned such a romantic name.
1½ tablespoons butter
4 cloves garlic, grated
2 cups light cream
1 cup freshly grated Parmesan cheese
½ cup sun-dried tomatoes + 1 tablespoon oil from the jar
1 tablespoon finely chopped fresh basil
2 teaspoons chicken bouillon powder
½ teaspoon dried thyme
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon crushed red pepper flakes (more if desired)
¾ box thin linguini or other long pasta
If using short pasta: about 3 cups dry noodles
Reserved pasta water (about ¼ cup)
Finely chop the sun-dried tomatoes. Add them to a blender or food processor with 1 tablespoon of the oil from the jar. Pulse until a coarse paste forms. Set aside.
Bring a large pot of salted water to a boil. Cook pasta according to package directions. Reserve about ¼ cup of the pasta water, then drain and set pasta aside.
In a large non-stick pan over medium heat, melt the butter. Add grated garlic, crushed red pepper flakes, dried thyme, and chicken bouillon powder. Cook for about 1 minute, stirring frequently.
Pour in the light cream. Heat for 5 minutes, alternating between medium and medium-low heat. A gentle simmer is fine, but do not boil.
Stir in Parmesan cheese, sun-dried tomato paste, salt, pepper, garlic powder, and fresh basil. Simmer for 5–7 minutes until thick and creamy. Add reserved pasta water a little at a time if you want a thinner sauce.
Add cooked pasta to the sauce and toss until well coated. Turn off heat and serve immediately. Garnish with extra Parmesan if desired.
Use freshly grated Parmesan for the smoothest, creamiest sauce.
