  • 1 packet taco seasoning

For the Rice Mixture

  • 2 cups cooked white rice
    (Brown rice or quinoa can be used)

  • 1 cup sour cream
    (Greek yogurt or dairy-free alternatives also work)

For the Cheesy Layers

  • 1 cup nacho cheese sauce

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

For the Chipotle Kick

  • 1 tablespoon chipotle sauce
    (Adjust to taste)

For the Wrap

  • 4 large flour tortillas
    (Whole wheat or gluten-free tortillas are fine)

For Grilling

  • 2 tablespoons butter or oil
    (Olive oil or non-stick spray for a lighter option)

Instructions

  • Cook the Beef
    Heat a skillet over medium heat. Add the ground beef and cook for 8–10 minutes until browned. Drain excess grease, stir in taco seasoning with a splash of water, and simmer for 5 minutes.

  • Warm the Tortillas
    Heat tortillas in a dry skillet over low heat or microwave for about 20 seconds. Keep them covered with a towel to stay warm.

  • Assemble the Burritos
    On each tortilla, layer cooked rice, seasoned beef, nacho cheese sauce, sour cream, and chipotle sauce. Sprinkle cheddar and mozzarella on top.

  • Wrap & Grill
    Fold the burritos tightly. Heat butter or oil in a skillet over medium heat. Place burritos seam-side down and grill for 3–4 minutes per side until golden and crispy.

  • Serve
    Let rest for one minute, slice in half, and serve warm with extra chipotle sauce, salsa, or guacamole.
