This Easy Grilled Cheese Burrito is the ultimate comfort meal—crispy on the outside, loaded with seasoned beef, creamy rice, and layers of melted cheese on the inside. It’s quick to make, easy to customize, and perfect for busy weeknights when you want something satisfying and indulgent without much effort.
1 pound ground beef
(Substitute with ground turkey or plant-based meat if desired)
1 packet taco seasoning
(Homemade seasoning works great for a healthier option)
2 cups cooked white rice
(Brown rice or quinoa can be used)
1 cup sour cream
(Greek yogurt or dairy-free alternatives also work)
1 cup nacho cheese sauce
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon chipotle sauce
(Adjust to taste)
4 large flour tortillas
(Whole wheat or gluten-free tortillas are fine)
2 tablespoons butter or oil
(Olive oil or non-stick spray for a lighter option)
Cook the Beef
Heat a skillet over medium heat. Add the ground beef and cook for 8–10 minutes until browned. Drain excess grease, stir in taco seasoning with a splash of water, and simmer for 5 minutes.
Warm the Tortillas
Heat tortillas in a dry skillet over low heat or microwave for about 20 seconds. Keep them covered with a towel to stay warm.
Assemble the Burritos
