1 cup unsalted butter, softened to room temperature
¾ cup packed light brown sugar
¾ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
¾ cup hot chocolate mix (about 4 packets)
¼ cup natural unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
8 ounces (about 1½ cups) semi-sweet chocolate, coarsely chopped — divided
1 cup mini marshmallows — divided
Preheat oven to 350°F (177°C).
Line a large baking sheet with parchment paper or a silicone baking mat.
Beat butter, brown sugar, and granulated sugar together on medium speed for about 2 minutes until light and fluffy.
Add eggs and vanilla, mixing until combined.
