Homemade Cheesy Garlic Breadsticks

These Homemade Cheesy Garlic Breadsticks are soft on the inside, golden on the outside, and loaded with cheesy, garlicky flavor. They’re easy to make from scratch and perfect as an appetizer, snack, or side dish for pasta, soups, or salads. Serve them warm for the best stretchy-cheese experience.

Ingredients

  • 1½ cups warm water (about 110°F / 43°C)

  • 2 teaspoons active dry yeast

  • 1 teaspoon sugar

  • 4 cups all-purpose flour

  • 2 teaspoons salt

  • 4 tablespoons olive oil

  • 4 cloves garlic, minced

  • 2 tablespoons butter, melted

  • 2 cups shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Activate the yeast
    In a small bowl, mix the warm water, yeast, and sugar. Let it sit for 5–10 minutes until foamy.

  2. Make the dough
    In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Knead until a smooth dough forms. Cover and let rise for about 1 hour, or until doubled in size.

  3. Prepare garlic butter
    Mix the minced garlic with the melted butter and set aside.

  4. Shape the breadsticks
    Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
    Roll the dough into a rectangle. Brush with garlic butter, sprinkle evenly with mozzarella, then roll up, slice into breadsticks, and place them on the baking sheet.

  5. Bake
    Bake for 15–20 minutes, or until golden brown and bubbly.

  6. Finish and serve
    Brush with remaining garlic butter, sprinkle with Parmesan and parsley, and serve warm.

Notes

  • Water temperature matters: Too hot can kill the yeast; lukewarm is ideal.

  • Extra cheesy: Add a mix of mozzarella and provolone or cheddar.

  • Crispier bottom: Bake on the lower oven rack for the last 5 minutes.

  • Make ahead: Prepare the dough a day in advance and refrigerate overnight.
