This Ground Beef and Potato Taco Bowl is a hearty, flavor-packed meal that’s easy enough for beginners and satisfying enough for the whole family. Seasoned ground beef and tender, golden potatoes come together with corn, black beans, and fresh toppings for a fun, customizable dinner that feels both comforting and fresh. 1 lb ground beef
2 medium potatoes, peeled and diced
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
1/2 cup beef broth or water
1 cup corn kernels (fresh, frozen, or canned)
1 cup black beans, drained and rinsed
1/2 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup salsa
1 avocado, diced
2 tbsp fresh cilantro, chopped
Salt and pepper, to taste
Lime wedges, for garnish
Tortilla chips, for serving (optional)
Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 5–7 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.
In the same skillet, cook ground beef over medium-high heat until browned, breaking it up as it cooks. Drain excess fat if needed.
Add diced onion and garlic to the beef. Cook for 2–3 minutes until the onion is soft and fragrant.
Stir in taco seasoning and beef broth (or water). Bring to a simmer and cook for 3–4 minutes, until thickened.
Return potatoes to the skillet, then add corn and black beans. Stir well and cook for 2–3 minutes until heated through.
Season with salt and pepper to taste.
Divide the beef and potato mixture among serving bowls.
Top with cheddar cheese, sour cream, salsa, avocado, and cilantro.
Serve with lime wedges and optional tortilla chips.
