For the Steak Bites

  • 1 lb (450 g) sirloin or ribeye steak, cut into bite-sized cubes

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 3 tablespoons unsalted butter

  • Salt and black pepper, to taste

  • Optional: chopped fresh parsley, for garnish

For the Parmesan Cream Sauce

  • 1 tablespoon unsalted butter

  • 2 cloves garlic, finely minced

  • 1 cup heavy cream

  • ½ cup freshly grated Parmesan cheese

  • Salt and black pepper, to taste

  • Optional: pinch of red pepper flakes

Instructions

  • Prep the steak: Pat the steak cubes dry with paper towels and season generously with salt and pepper.

  • Sear the steak: Heat olive oil in a large skillet over medium-high heat. Add steak in batches and sear for 2–3 minutes per side until browned. Remove from the skillet and set aside.

  • Make the garlic butter: Reduce heat to medium. In the same skillet, melt the butter and add the minced garlic. Sauté for about 30 seconds until fragrant. Return the steak bites to the skillet and toss to coat in the garlic butter.

  • Prepare the Parmesan cream sauce: In a small saucepan, melt butter over medium heat. Add garlic and sauté for 30 seconds. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until smooth and creamy. Season with salt, pepper, and red pepper flakes if using.

  • Serve: Spoon the Parmesan cream sauce over the steak bites or serve it on the side. Garnish with fresh parsley and serve immediately.

Notes

  • Dry the steak well before searing to get a golden crust.

  • Do not overcrowd the pan—sear in batches if needed.

  • Use freshly grated Parmesan for the smoothest sauce.

  • For a lighter sauce, substitute half-and-half for some of the heavy cream.
