These Funfetti Cookies are soft, chewy sugar cookies packed with colorful sprinkles in every bite. They’re cheerful, buttery, and perfect for birthdays, holidays, or anytime you want a fun, bakery-style treat that’s easy to make at home.

  • 2½ cups (300g) all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon fine salt

  • 1 cup (227g) unsalted butter, softened

  • ⅔ cup (130g) granulated sugar

  • ¾ cup (85g) powdered sugar

  • 1 large egg

  • 1 teaspoon pure vanilla extract

  • ½ cup sprinkles (up to ⅔ cup if you like extra)

Instructions

  • Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.

  • In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

  • In a large mixing bowl, beat butter, granulated sugar, and powdered sugar on medium-low speed for about 4 minutes, until light and fluffy.

  • Add egg and vanilla extract. Beat just until combined.

  • Add dry ingredients and mix on low speed until just combined.

  • Gently fold in sprinkles. Do not overmix.

  • Scoop dough into 1½-tablespoon portions, roll into balls, and place on baking sheets about 2 inches apart.

  • Bake for 11–12 minutes, until edges are lightly golden and centers are still soft.

  • Cool on baking sheet for 5–10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use jimmies-style sprinkles instead of nonpareils to prevent color bleeding.

  • For extra softness, slightly underbake the cookies.

  • Chill dough for 20 minutes if it feels too soft to handle.

  • Store cookies in an airtight container at room temperature for up to 5 days.

  • Freeze baked cookies for up to 3 months.
