These Funfetti Cookies are soft, chewy sugar cookies packed with colorful sprinkles in every bite. They’re cheerful, buttery, and perfect for birthdays, holidays, or anytime you want a fun, bakery-style treat that’s easy to make at home.
2½ cups (300g) all-purpose flour
½ teaspoon baking soda
½ teaspoon fine salt
1 cup (227g) unsalted butter, softened
⅔ cup (130g) granulated sugar
¾ cup (85g) powdered sugar
1 large egg
1 teaspoon pure vanilla extract
½ cup sprinkles (up to ⅔ cup if you like extra)
Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat butter, granulated sugar, and powdered sugar on medium-low speed for about 4 minutes, until light and fluffy.
Add egg and vanilla extract. Beat just until combined.
Add dry ingredients and mix on low speed until just combined.
Gently fold in sprinkles. Do not overmix.
Scoop dough into 1½-tablespoon portions, roll into balls, and place on baking sheets about 2 inches apart.
Bake for 11–12 minutes, until edges are lightly golden and centers are still soft.
Cool on baking sheet for 5–10 minutes, then transfer to a wire rack to cool completely.
Use jimmies-style sprinkles instead of nonpareils to prevent color bleeding.
For extra softness, slightly underbake the cookies.
Chill dough for 20 minutes if it feels too soft to handle.
Store cookies in an airtight container at room temperature for up to 5 days.
Freeze baked cookies for up to 3 months.
