  • 1 large egg

  • ½ cup (2 ounces) grated cheese (cheddar, pepper jack, or gruyère work well)

  • 1 teaspoon finely chopped fresh herbs (such as thyme or rosemary)

  • Salt and black pepper, to taste

  • Pinch of cayenne pepper (optional)

Instructions

  • Lightly toast the bread, or broil for 1–2 minutes per side, just until lightly crisp.

  • Preheat the oven to 400°F (200°C).

    • If using a toaster oven, place the rack on the bottom and select BAKE.

  • Crack the egg into a small bowl and beat with a fork until the yolk and white are fully combined.

  • Stir in the grated cheese and fresh herbs. Season with salt and black pepper.

  • Spread the egg and cheese mixture evenly over the toasted bread, reaching all the way to the edges. Sprinkle with cayenne if using.

  • Bake for 10–12 minutes, or until the mixture is puffed, bubbly, and lightly golden on top.

  • Serve hot and enjoy.
