For the Lemon Brownies

  • 1½ cups all-purpose flour

  • 1½ cups granulated sugar

  • ½ teaspoon salt

  • 1 cup unsalted butter, softened

  • 4 large eggs (room temperature)

  • 2 tablespoons lemon zest (from 23 lemons)

  • ⅓ cup fresh lemon juice

  • 1 teaspoon vanilla extract

For the Lemon Glaze

  • 1 cup powdered sugar

  • 23 tablespoons fresh lemon juice

  • 1 tablespoon lemon zest

Instructions

1. Preparation

  1. Preheat oven to 350°F (175°C).

  2. Line a 9×13-inch baking pan with parchment paper.

  3. Lightly grease the parchment paper for easy removal.


2. Make the Batter

  1. In a bowl, whisk together flour and salt.

  2. In another large bowl, cream the butter and sugar using an electric mixer for about 3–4 minutes, until light and fluffy.

  3. Add eggs one at a time, mixing well after each addition.

  4. Mix in lemon zest, lemon juice, and vanilla extract.

  5. Gently fold the dry ingredients into the wet mixture until just combined.
    Avoid overmixing to keep the brownies soft.


3. Bake

  1. Pour the batter evenly into the prepared pan.

  2. Smooth the top with a spatula.

  3. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

  4. Allow brownies to cool completely before glazing.


4. Prepare the Lemon Glaze

  1. Mix powdered sugar with lemon juice until smooth.

  2. Stir in lemon zest for extra flavor.

  3. Pour glaze evenly over cooled brownies.

  4. Let set for about 30 minutes before slicing.
