Ingredients

Scale
  • 1¼ cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 tablespoons white sugar

  • ⅛ teaspoon salt

  • 1 cup milk

  • 2 tablespoons butter, melted

  • 1 large egg

  • ¼ teaspoon vanilla extract

Instructions

  1. Mix the batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. Add the milk, melted butter, egg, and vanilla extract. Stir gently until just combined. Do not overmix.

  2. Cook the pancakes
Heat a nonstick skillet over medium heat. Pour about ⅓ cup of batter into the center of the pan. Cook until bubbles form on the surface and the edges look set.

  3. Flip and finish
Flip the pancake and cook for about 1 more minute, or until golden brown. Repeat with the remaining batter.

  4. Serve warm
Stack pancakes on a plate and cover loosely with a clean towel to keep warm while cooking the rest. Serve with butter, syrup, and fresh fruit.

Notes

  • Don’t overmix: A few small lumps in the batter are fine and help keep pancakes fluffy.

  • No greasing needed: If using a good nonstick pan, you can skip oil or butter for evenly golden pancakes.

  • Heat control: Medium heat works best—too hot will brown the outside before the inside cooks.

  • Flavor boost: Add blueberries, chocolate chips, or a pinch of cinnamon to the batter.
