This Easy Ground Beef Bulgogi is a quick and flavorful twist on the classic Korean dish. Made with simple pantry ingredients, the savory-sweet bulgogi sauce coats tender ground beef for a satisfying meal that’s ready in just 25 minutes. It’s perfect for busy weeknights and tastes great served over warm rice with a soft-boiled egg on top.

Bulgogi Sauce

  • ¼ cup soy sauce

  • 2 tablespoons rice wine vinegar

  • 1 tablespoon brown sugar, plus 2 teaspoons

  • 2 teaspoons sesame oil

  • 1 teaspoon fresh ginger, minced

  • 1 teaspoon fresh garlic, minced

Ground Beef

  • 1 pound ground beef

  • ½ small yellow onion, diced

Toppings

  • 1 tablespoon scallion, diced

  • 1 teaspoon sesame seeds

  • 4 large soft-boiled eggs

Instructions

Make the Bulgogi Sauce

  1. In a medium bowl, combine soy sauce, rice wine vinegar, brown sugar, sesame oil, ginger, and garlic.

  2. Mix well and set aside.

Cook the Beef

  1. Heat a skillet over medium heat.

  2. Add the ground beef and diced onion. Cook for about 5 minutes, breaking up the meat, until mostly browned (slightly pink is fine).

  3. Pour in the bulgogi sauce and stir to coat the beef evenly.

  4. Simmer for 6–10 minutes until the sauce thickens slightly and the beef is fully cooked.

  5. Remove from heat.

Serve

  • Divide the beef mixture between 4 bowls.

  • Top with scallions, sesame seeds, and a soft-boiled egg.

  • Serve over steamed rice.

Notes

  • Use low-sodium soy sauce if you prefer less salt.

  • Don’t overcook the beef—simmer just until the sauce thickens to keep it juicy.

  • Add heat with gochujang or red pepper flakes if you like it spicy.
