These Easy Breakfast Potatoes are a simple homemade staple made with fresh potatoes, butter, oil, and classic seasonings. Crispy on the outside and tender on the inside, they’re perfect alongside eggs, tucked into breakfast burritos, or served with toast for a comforting morning meal.

  • 4 potatoes, cut into ½-inch cubes

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • 1 tablespoon butter

  • 1 tablespoon oil

  • 1 tablespoon fresh chopped parsley (or ½ teaspoon dried)

Instructions

  • Cut the potatoes into small ½-inch cubes for even cooking.

  • Heat a skillet over medium-high heat and add the butter and oil.

  • Once hot, add the potatoes and toss to fully coat in the butter and oil mixture.

  • Sprinkle with salt, pepper, garlic powder, and onion powder (reserve parsley for later).

  • Cover the skillet and let the potatoes lightly steam for 3–4 minutes.

  • Remove the lid and stir the potatoes. Continue cooking uncovered, turning them occasionally so they brown evenly on all sides.

  • Cook until the potatoes are golden and lightly crispy on the outside and soft on the inside.

  • Sprinkle with parsley and serve immediately.

Notes

  • Uniform cubes matter: Cutting potatoes evenly ensures they cook at the same rate.

  • Don’t overcrowd the pan: Too many potatoes will steam instead of crisp.

  • Cast iron works best: It gives the potatoes a better golden crust.

  • Add flavor variations: Paprika, chili powder, or rosemary are great additions.
