This gooey Deep Dish Cookie Pie is a total crowd-pleaser! It looks like a classic cookie dessert but is secretly made with white beans for an incredibly soft, rich, fudgy texture. Perfect for parties, potlucks, or anytime you want a warm and chocolate-studded treat that people will rave about — no one will guess the secret ingredient!
2 cans white beans or garbanzo beans (about 500 g after draining & rinsing)
1 cup quick oats or almond flour
¼ cup applesauce or yogurt
3 tbsp oil or ¼ cup nut butter
2 tsp pure vanilla extract
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1½ cups brown sugar or unrefined sugar
1 cup chocolate chips
1️⃣ Prep the Beans
Drain and rinse the beans very well until no residue remains.
2️⃣ Blend the Batter
In a food processor, blend all ingredients except chocolate chips until very smooth.
3️⃣ Add Chocolate Chips
Fold in the chocolate chips until evenly distributed.
4️⃣ Bake
Pour batter into a greased 9 or 10-inch springform pan.
Bake at 350°F (177°C) for 35 minutes.
5️⃣ Rest Before Serving
Allow pie to rest at least 10 minutes before removing from the pan.
Serve warm and gooey, or let it cool and set further.
Rinse beans thoroughly to avoid bean flavor — this step is essential.
For a cakier texture, use applesauce; for fudgier, use nut butter.
A food processor creates a smoother batter than a blender.
Don’t overbake — it will continue setting as it cools.
