These Crockpot Garlic Butter Beef Bites with Potatoes are comfort food at its easiest. Tender beef, soft baby potatoes, and a rich garlic butter sauce slowly come together to create a cozy, satisfying meal with very little effort. It’s the kind of dish that feels like a warm hug—perfect for busy weekdays or relaxed family dinners.
1 pound baby potatoes, halved
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon paprika
½ cup beef broth
2 tablespoons fresh parsley, chopped (optional, for garnish)
Season the Beef
In a large bowl, combine the beef cubes with olive oil, salt, black pepper, thyme, rosemary, and paprika. Toss well until the beef is evenly coated.
Brown the Beef (Optional but Recommended)
Heat a skillet over medium-high heat. Sear the beef in batches until browned on all sides. This step adds extra flavor, but you can skip it if you’re short on time.
Transfer to Crockpot
Place the beef into the crockpot.
Prepare the Garlic Butter
In the same skillet, add the minced garlic to the melted butter. Cook on low heat for 1–2 minutes, just until fragrant (do not brown).
Assemble the Dish
Pour the garlic butter over the beef. Add the baby potatoes around the beef, then pour in the beef broth. Gently stir to combine.
Slow Cook
Cover and cook on low for 6–8 hours or high for 3–4 hours, until the beef is tender and the potatoes are cooked through.
Finish and Serve
Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Browning the beef adds depth and richness, but the recipe still works great without it.
You can substitute baby potatoes with fingerling potatoes or quartered red potatoes.
Add carrots, onions, or mushrooms for extra flavor and nutrition.
If you love garlic, feel free to add an extra clove or two.
Serve with crusty bread to soak up the delicious garlic butter sauce.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
