Crispy Ground Beef Tacos (Easy Weeknight Dinner!)

These crispy ground beef tacos are a quick and easy weeknight favorite! The tortillas bake up perfectly crunchy while the cheesy beef filling stays juicy and flavorful. Serve them with salsa, queso, or guacamole for a fun and delicious dinner that everyone will love!

  • 1 lb lean ground beef (90%)

  • 1 packet taco seasoning

  • ¾ cup red enchilada sauce

  • 2 ½ cups Oaxaca cheese, Mexican blend, or Monterey Jack (shredded)

  • 10 corn tortillas

  • 1 tbsp olive oil

Instructions

  1. Prep the Oven
    Preheat oven to 450°F (230°C).

  2. Cook the Beef
    Heat a skillet over medium-high heat. Brown ground beef, breaking it up as it cooks.
    Add taco seasoning and enchilada sauce. Simmer for 2–3 minutes, then remove from heat.

  3. Warm the Tortillas
    Wrap tortillas in a damp paper towel and microwave for 30–60 seconds until soft and pliable.

  4. Assemble the Tacos
    Brush one side of each tortilla lightly with olive oil, oiled side down on a baking sheet.
    Add 2 tbsp cheese to half of each tortilla, ¼ cup beef, then 2 tbsp more cheese.
    Fold to close.

  5. Bake Until Crispy
    Arrange folded tacos in a single layer.
    Bake for 16 minutes or until golden, crispy, and the cheese melts.

  6. Cool & Serve
    Let rest for a few minutes, then serve with salsa, sour cream, or guacamole!

Notes

  • Warm tortillas before folding to prevent cracking.

  • Avoid foil on the baking sheet — tacos may stick. Use nonstick bakeware.

  • Extra crispy? Flip halfway through the bake time.

  • Make ahead: Cook the beef filling up to 2 days early and refrigerate.
