This crispy-tender cauliflower is roasted at high heat for golden edges and a deliciously seasoned bite. It makes the perfect healthy side dish or snack — simple, flavorful, and ready in just 30 minutes!

1 large head cauliflower, cut into florets
2–3 tablespoons (30–45 ml) avocado oil, divided
1 teaspoon sea salt
1 tablespoon curry powder
½ teaspoon maple syrup (optional)
Optional Garnishes:
Fresh cilantro
Toasted almonds
Tahini drizzle
1️⃣ Prep & Season
Preheat the oven to 450°F (232°C).
Cut cauliflower into evenly sized florets. Toss with 1 tbsp oil, sea salt, curry powder, and maple syrup if using.
2️⃣ Sear for Crispiness
Heat the remaining oil in an oven-safe skillet over medium-high heat until very hot. Add cauliflower and sear 5 minutes, stirring occasionally, until golden.
3️⃣ Roast to Finish
Transfer skillet to the oven and roast 10–15 minutes, stirring every 5 minutes, until cauliflower is crispy and cooked through.
4️⃣ Garnish & Serve
Remove from oven and add optional toppings like cilantro, toasted almonds, or tahini drizzle. Serve immediately.
Refrigerate leftovers up to 4 days
Reheat in a hot skillet or oven for best texture
Not recommended for freezing
Use high-heat oil like avocado or grapeseed for the best sear.
