3 lb chicken wings, split into wings and drummettes (wingtips removed)
1 tablespoon baking powder (aluminum-free)
1 teaspoon fine sea salt
2 teaspoons garlic powder
¼ cup unsalted butter, melted
¼ cup Frank’s Original Red Hot Sauce
1 tablespoon granulated sugar or brown sugar
Pat the chicken wings very dry with paper towels (this helps them get extra crispy).
Preheat the oven to 450°F (230°C). Line a rimmed baking sheet with foil and place a wire rack on top.
In a small bowl, mix the baking powder, salt, and garlic powder. Sprinkle evenly over the wings and toss to coat.
Arrange the wings on the wire rack in a single layer.
Bake for 25 minutes, flip the wings, then bake for another 25 minutes, or until crisp and fully cooked.
