  • 1 tablespoon olive oil

  • 1 tablespoon Italian seasoning

  • 1 teaspoon paprika (regular or smoked)

  • 1 large sweet potato (or 2 small), peeled and cubed

  • 5 cloves garlic, minced

  • ¼ teaspoon red pepper flakes (optional, adjust to taste)

  • 1 tablespoon tomato paste

  • 6 cups water

  • 8 oz refrigerated three-cheese tortellini

  • 4 oz fresh spinach

  • ½ cup heavy cream

  • 4 tablespoons fresh thyme (or 1½ teaspoons dried)

  • Salt, to taste

Instructions

  • Cook the Sausage: Heat olive oil in a large, high-sided pot over medium heat. Add the sausage and cook, breaking it up, until fully browned. Drain excess grease if needed.

  • Season: Sprinkle in Italian seasoning and paprika. Stir to coat the sausage evenly.

  • Add Vegetables & Aromatics: Add sweet potato, garlic, red pepper flakes, and tomato paste. Stir well to combine.

  • Add Liquid: Pour in the water and stir until the tomato paste dissolves.

  • Simmer: Bring to a boil, then reduce to a steady simmer. Cover and cook for about 15 minutes, until the sweet potatoes are tender.

  • Cook Tortellini: Add tortellini, cover, and cook according to package instructions (about 8–10 minutes).

  • Add Spinach: Stir in spinach and cook just until wilted.

  • Finish with Cream: Remove from heat, stir in heavy cream, and adjust seasoning with salt and extra red pepper flakes if needed.

  • Serve: Top with fresh thyme and serve hot.

Notes

  • No broth needed: The sausage adds plenty of flavor, but you can substitute chicken broth if desired.

  • Adjust spice level: Use mild sausage and skip red pepper flakes for a gentler soup, or go spicy for extra heat.

  • Cream separation: The soup may look slightly grainy after cooling or refrigeration—this is normal. Once reheated and stirred, it becomes creamy again.

  • Make it lighter: Swap heavy cream for half-and-half or evaporated milk for a lighter version.

  • Extra veggies: Mushrooms or zucchini make great additions if you want more vegetables.
