Ingredients

Scale

For the Creamy Bacon Cheddar Filling

  • 7 oz cream cheese, room temperature

  • 1 cup shredded sharp cheddar cheese

  • 5 oz cooked bacon, cooled and diced (½-inch pieces)

  • 1 tablespoon mayonnaise

  • 1 tablespoon sour cream (full-fat recommended)

  • 1 teaspoon hot sauce (optional, or to taste)

  • Salt and black pepper, to taste

  • 1 tablespoon chopped chives (optional, for garnish)

For Assembly

  • 4 large sesame bagels

Instructions

Step 1: Make the Creamy Bacon Cheddar Filling

  1. In a mixing bowl, add the cream cheese, shredded cheddar, diced bacon, mayonnaise, sour cream, and hot sauce (if using).

  2. Season with salt and black pepper to taste.

  3. Mix until smooth and fully combined.

  4. For presentation, reserve a small amount of bacon and chives for topping later if desired.

Step 2: Prepare the Bagels

  1. Preheat oven to 375°F (190°C).

  2. Using a sharp knife, slice a very thin layer off the bottom of each bagel, keeping the seeded top intact.

  3. Place the bagel seed-side down.

  4. Carefully run a knife around the inner circle of the bagel without cutting through the outer edge.

  5. Gently press the center outward with your thumbs to create space for the filling.

Step 3: Stuff and Bake the Bagels

  1. Divide the creamy bacon cheddar filling evenly among the hollowed bagels.

  2. Smooth the tops with a spoon.

  3. Sprinkle reserved bacon and chives on top, if using.

  4. Place bagels on a baking sheet and bake for 12–15 minutes, until heated through and slightly golden on top.

  5. Remove from the oven and let cool for 2–3 minutes before serving.

Notes

  • Room-temperature cream cheese is key for a smooth, lump-free filling.

  • Sharp cheddar gives the strongest flavor and balances the richness.

  • Don’t overbake: The goal is warm and creamy, not dried out.

  • Extra crispy top: Broil for 1–2 minutes at the end, watching closely.
