These Cinnamon Roll French Toast Roll-Ups are a fun and delicious breakfast mashup that combines everything you love about classic cinnamon rolls and French toast—sweet, warm cinnamon filling wrapped inside soft bread, dipped in a rich egg batter, and pan-fried until golden. They’re crispy on the outside, soft and gooey on the inside, and ready in just 25 minutes.
10 slices white sandwich bread
3 tablespoons butter, melted
3 tablespoons brown sugar
2 tablespoons ground cinnamon
3 large eggs
1 tablespoon milk
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
2–3 tablespoons butter, for frying
Prepare the Bread
Remove the crusts from the bread slices. Using a rolling pin, flatten each slice until thin and pliable.
Make the Cinnamon Filling
In a small bowl, mix melted butter, brown sugar, and ground cinnamon until well combined.
Fill and Roll
Spread the cinnamon mixture evenly over each slice, leaving a small border around the edges. Roll each slice up tightly and gently press the seam to seal.
Prepare the Egg Mixture
In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
Cook the Roll-Ups
Heat a skillet over medium heat and add butter. Dip each roll-up into the egg mixture (do not oversoak), then place seam-side down in the skillet.
Brown All Sides
Cook for 2–3 minutes total, turning gently to brown all sides evenly until golden and cooked through.

Serve immediately with maple syrup, powdered sugar, or a drizzle of icing.
