300 g pasta (penne or your favorite shape)
300 g chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried Italian herbs
1 can (400 g) crushed tomatoes
½ cup heavy cream
Salt and black pepper, to taste
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh basil leaves, for garnish
Optional: red pepper flakes
Cook the Pasta
Boil pasta in salted water according to package directions until al dente. Drain and set aside.
Cook the Chicken
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and Italian herbs. Cook for 5–7 minutes, until golden and fully cooked. Remove chicken from skillet and set aside.
Make the Sauce
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Stir in crushed tomatoes and bring to a gentle simmer. Cook for 5 minutes.
Add Cream
Pour in heavy cream and simmer for another 2–3 minutes until the sauce becomes creamy.
Combine Everything
Return chicken to the skillet, then add cooked pasta. Toss well to coat.
Add Cheese
Sprinkle mozzarella and Parmesan over the pasta and stir until melted and creamy.
Serve
Remove from heat, garnish with fresh basil, and add red pepper flakes if desired. Serve hot.
Use rotisserie chicken to save time.
Add veggies like spinach, mushrooms, or zucchini for extra nutrition.
Swap cream with half-and-half for a lighter version.
Make it spicy with extra red pepper flakes or a dash of hot sauce.
