1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp Worcestershire sauce
1/2 cup ketchup
1 tbsp mustard
1/2 cup grated cheddar cheese
1/4 cup fresh parsley, chopped
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce. Mix until just combined.
Scoop a small portion of the meat mixture and flatten it in your hand. Place a pinch of cheddar cheese in the center and mold the meat around it to form a ball.
Place each meatloaf bite on the prepared baking sheet. Repeat with remaining mixture and cheese.
In a small bowl, mix together ketchup and mustard. Brush the glaze over each meatloaf bite.
Bake for 25–30 minutes, or until cooked through and lightly caramelized on top.
Garnish with chopped parsley before serving.
Extra cheesy: Use cubed cheddar instead of shredded for a gooier center.
Flavor boost: Add smoked paprika or Italian seasoning to the meat mixture.
Make it spicy: Mix a little hot sauce into the glaze or add red pepper flakes.
Air fryer option: Cook at 375°F (190°C) for 12–15 minutes, shaking halfway through.
Meal-friendly: Serve with mashed potatoes, roasted veggies, or a simple salad.
