  • 4 cloves garlic, minced

  • ½ cup grated Parmesan cheese (plus extra for serving)

  • 1 cup shredded mozzarella cheese

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Spaghetti
    Bring a large pot of well-salted water to a boil. Add the spaghetti and cook until al dente, about 8–10 minutes. Drain, reserving ½ cup of pasta water.

  2. Prepare the Garlic Base
    In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes, stirring constantly, until fragrant. Do not let the garlic brown.

  3. Make the Cheesy Sauce
    Reduce the heat to low. Add the Parmesan and mozzarella cheese to the skillet, stirring until melted and creamy. Gradually add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.

  4. Combine Pasta and Sauce
    Add the cooked spaghetti to the skillet and toss until fully coated in the cheesy garlic sauce. Season with salt and pepper to taste.

  5. Serve
    Divide into plates and garnish with chopped parsley and extra Parmesan cheese. Serve immediately.
