Ingredients

Scale
  • 1 lb ground beef

  • ½ cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • 1 tablespoon olive oil

  • 4 large flour tortillas

  • ¼ cup butter, melted

  • 3 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and black pepper, to taste

  • Optional: sliced pickles, for garnish

Instructions

  1. Preheat the Oven
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Cook the Beef
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 7–8 minutes, breaking it apart, until browned and fully cooked.

  3. Season the Beef
Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and pepper. Mix well, then remove from heat and let cool slightly.

  4. Make the Garlic Butter
In a small bowl, combine melted butter and minced garlic. Set aside.

  5. Assemble the Rollups
Lay tortillas flat. Evenly spread the beef mixture over each tortilla, then sprinkle with cheddar and mozzarella cheese.

  6. Roll and Bake
Roll tortillas tightly, tucking in the sides. Place seam-side down on the baking sheet and brush generously with garlic butter.
Bake for 12–15 minutes, until golden brown and the cheese is melted.

  7. Serve
Let rest for a few minutes before slicing. Garnish with sliced pickles if desired and serve warm.

Notes

  • Let the beef cool slightly before adding cheese to prevent melting too early.

  • Use freshly shredded cheese for better melt and texture.

  • Extra crisp: Broil for 1–2 minutes at the end (watch closely).

  • Flavor boost: Add a pinch of chili flakes or Dijon mustard to the beef.

  • Great for sharing: Slice into pinwheels for appetizers or party trays.
