1 tbsp vegetable oil
1 ring (13.5 oz) andouille sausage — sliced ¼-inch thick
1 large onion — diced (about 1 cup)
½ cup diced celery (about 1 rib)
½ red bell pepper — diced
2 tsp minced garlic
1 tsp Cajun seasoning (more to taste)
½ tsp kosher salt
½ tsp black pepper
½ tsp paprika
¼ tsp cayenne pepper
4 cups chicken broth
4 large russet potatoes — peeled & cubed
½ cup heavy whipping cream
1 cup shredded mild cheddar cheese
Chopped parsley — for garnish
1️⃣ Brown the Sausage
Heat vegetable oil in a large pot over medium heat. Add sliced andouille sausage and cook 3–4 minutes until browned. Remove and set aside.
2️⃣ Cook the Veggies
In the same pot, add onion, celery, and bell pepper. Cook 5–8 minutes until softened.
Add garlic and cook 1 minute more, just until fragrant.
3️⃣ Make the Soup Base
Add Cajun seasoning, salt, pepper, paprika, cayenne, chicken broth, and potatoes.
Bring to a simmer and cook 20–25 minutes, until potatoes are tender.
4️⃣ Add Cream & Cheese
Return sausage to the pot. Stir in heavy cream and cheddar cheese.
Simmer 5 more minutes, until cheese melts and soup thickens slightly.
