For the Cookies

  • 1 cup unsalted butter, room temperature

  • ½ cup granulated sugar

  • 1 cup light brown sugar, packed

  • 2 eggs, room temperature

  • 1 teaspoon vanilla extract

  • 3 ¾ cups cake flour

  • 2 tablespoons cornstarch

  • 1 teaspoon baking soda

  • 1 ½ teaspoons baking powder

  • 1 teaspoon kosher salt

Brown Sugar Filling

  • 5 tablespoons unsalted butter, softened

  • ¾ cup light brown sugar, packed

  • 1 teaspoon cinnamon

  • 2 tablespoons cake flour

Brown Sugar Glaze

  • 1 cup powdered sugar

  • ½ teaspoon cinnamon

  • 3 tablespoons unsalted butter, melted and cooled

  • 2 ½ tablespoons milk

Instructions

1. Make the Cookie Dough

  1. In a large bowl, beat together butter, granulated sugar, and brown sugar for 2–3 minutes until fluffy.

  2. Add eggs and vanilla, and beat for another 1–2 minutes.

  3. In a separate bowl, whisk cake flour, cornstarch, baking soda, baking powder, and salt.

  4. Add the dry ingredients to the wet mixture and mix until combined.

  5. Cover the dough and chill it for 1 hour.


2. Make the Filling

  1. In a medium bowl, mix softened butter, brown sugar, cinnamon, and cake flour until smooth.

  2. Scoop 2 teaspoons of filling and roll into small balls. Place them on a plate or tray.


3. Assemble the Cookies

  1. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.

  2. Scoop cookie dough using a ¼ cup scoop (or large scoop).

  3. Split each dough ball in half, press a well into one half, and place a filling ball inside.

  4. Press the other half on top and pinch the edges to seal.

  5. Roll gently into a smooth ball.

  6. Place cookies 2 inches apart on the baking sheet.


4. Bake

  • Bake for 11–13 minutes, until the edges are lightly golden and the tops look set.

  • Cool on the sheet for 5 minutes, then move to a wire rack.


5. Make the Glaze

  1. Whisk powdered sugar, cinnamon, melted butter, and milk until smooth.

  2. Spoon glaze over each cookie, letting it gently spread to the edges.

  3. Let the glaze set for about 15 minutes.

  • Don’t skip chilling the dough — it helps the cookies stay thick and prevents spreading.

  • Seal the filling well to keep it inside while baking.

  • Use room-temperature butter and eggs for smooth mixing.
