Asian Ground Beef Noodles: A Comforting One-Pot Meal Packed with Bold Asian Flavors

This Asian Ground Beef Noodles recipe is a quick, comforting one-pot meal packed with savory Chinese-inspired flavors. Tender vermicelli noodles are tossed in a rich, peppery beef sauce that comes together in just minutes—perfect for busy nights when you want something satisfying without a lot of cleanup.

Ingredients

Scale
  • 2 tbsp oil

  • 250 g ground beef

  • 2 tbsp soy sauce

  • 1 tsp fresh ginger, grated

  • 2 tsp white pepper powder (adjust to taste)

  • 2 tbsp corn flour (cornstarch)

  • 2 tbsp spring onions, chopped

  • 120 g vermicelli noodles (adjust as needed)

  • 2 tbsp Chinese dark vinegar (optional)

  • 2 tbsp Chinese chili oil (optional)

Instructions

  1. Heat oil in a saucepan over medium heat. Add ground beef and cook, breaking it apart, until slightly browned.

  2. Add grated ginger and soy sauce. Stir-fry for 10–15 seconds to lightly caramelize the soy sauce.

  3. Add 1 cup of water and white pepper powder. Cover and simmer for about 10 minutes, adding more water if needed.

  4. Meanwhile, cook vermicelli noodles in a pot of boiling salted water according to package instructions until al dente. Drain and set aside.

  5. Mix corn flour with ½ cup water. Pour into the beef sauce and stir until the sauce thickens evenly.

  6. Add cooked noodles to the sauce and toss well to coat.

  7. Serve hot, topped with spring onions. Add Chinese dark vinegar and chili oil if desired.

Notes

  • Boost flavor: Let the soy sauce caramelize briefly with the beef before adding water—it adds depth and mild sweetness.

  • Noodle swaps: Vermicelli mimics Chinese hand-pulled noodles, but egg noodles or rice noodles work well too.

  • Spice level: White pepper gives warmth; chili oil adds heat—adjust both to taste.

  • One-pot shortcut: Cook noodles directly in the beef sauce by adding extra water, then thicken at the end.
