Apple Fritter Bites

  • Nonstick cooking spray

  • 1½ cups all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon kosher salt

  • 2 teaspoons ground cinnamon

  • ¼ cup unsalted butter, melted

  • ¼ cup granulated sugar

  • 1 large egg

  • ½ teaspoon vanilla extract

  • ½ cup unsweetened applesauce

  • 1½ cups finely diced apples (Honeycrisp or Gala, about 2 medium)

Apple Cider Glaze

  • 2 cups powdered sugar

  • ⅓ cup + 2 tablespoons apple cider or apple juice

Instructions

  • Preheat Oven
    Preheat oven to 400°F (200°C) and grease a baking sheet with nonstick spray.

  • Mix Dry Ingredients
    In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.

  • Mix Wet Ingredients
    In a large bowl, whisk melted butter and sugar until combined.
    Add egg, vanilla, and applesauce, whisking until smooth.

  • Combine & Fold Apples
    Add dry ingredients to wet ingredients and stir just until combined.
    Gently fold in the diced apples.

  • Bake
    Scoop about 1 tablespoon of batter per bite and drop onto the baking sheet, spaced apart.
    Bake for 10 minutes.

  • Glaze & Broil
    Turn oven to broil (high).
    Whisk powdered sugar and apple cider until thin and pourable.
    Brush glaze over warm fritter bites and broil for 2–4 minutes, rotating the pan often, until bubbly and lightly caramelized.

  • Finish
    Remove from oven and brush with remaining glaze.
    Let sit for 15 minutes to set before serving.

Notes

  • Dice apples finely so they soften quickly and distribute evenly.

  • Do not overmix the batter—this keeps the fritters light and tender.

  • Watch closely while broiling to prevent burning.

  • For extra flavor, add a pinch of nutmeg to the batter.
