These Air Fryer Sweet Potato Cubes are crispy on the outside, tender on the inside, and full of cozy flavor. They cook fast (about 15 minutes!), use simple pantry spices, and make a healthy side dish everyone can enjoy—perfect for busy weeknights or meal prep.
2–3 medium sweet potatoes (about 3½ cups, peeled and cubed)
2 tablespoons extra virgin olive oil (or olive oil spray)
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon ground black pepper
Prepare the sweet potatoes
Wash and dry the sweet potatoes. Peel them, then cut into evenly sized ½–¾ inch cubes.
Season
Place the cubes in a medium bowl and drizzle with olive oil. In a small bowl, mix paprika, garlic powder, salt, and pepper. Sprinkle over the potatoes and toss until well coated.
Air fry
Preheat the air fryer to 400°F (200°C). If your air fryer doesn’t preheat, run it empty for 2–3 minutes. Lightly spray the basket, add the sweet potatoes in an even layer, and cook for 14–17 minutes, shaking or flipping halfway through.
Tip: Cook in batches if your air fryer is small—crowding reduces crispiness.
Serve
Turn off the air fryer and let the potatoes rest inside for 3–5 minutes to crisp up more. Serve warm and enjoy!
