1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
¼ cup fresh lemon juice, freshly squeezed
2 tablespoons olive oil
2 cloves garlic, finely minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika (smoked paprika optional)
½ teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
1 tablespoon fresh parsley, chopped
Lemon wedges, for serving
Prepare the chicken:
Cut chicken breasts into evenly sized 1-inch cubes and place them in a mixing bowl.
Make the marinade:
In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, thyme, paprika, salt, and black pepper until well combined.
Marinate:
Pour the marinade over the chicken and toss until evenly coated. Cover and refrigerate for at least 30 minutes, up to 2 hours.
Preheat air fryer:
Preheat the air fryer to 400°F (200°C).
Arrange chicken:
Place the marinated chicken bites in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
Air fry:
Cook for 10–12 minutes, flipping halfway through. Chicken is done when golden and the internal temperature reaches 165°F (74°C).
Rest and serve:
Let the chicken rest for 1–2 minutes. Garnish with fresh parsley and serve with lemon wedges if desired.
Even sizing matters: Cut chicken pieces evenly for consistent cooking.
Don’t over-marinate: Lemon juice can break down the chicken if left too long.
Extra crispiness: Lightly spray the basket with oil before cooking.
Serving ideas: Serve over rice, quinoa, salad, or inside wraps and bowls.
