This Air Fryer Lasagna Fritta is a delicious copycat of the famous Olive Garden appetizer. Rolled lasagna noodles are filled with a rich, creamy five-cheese mixture, breaded, and air-fried until golden and crispy on the outside while staying gooey and cheesy inside. It’s the perfect appetizer for parties, holidays, or anytime you want a restaurant-style dish made right at home—with less oil and all the flavor.
10 oz lasagna noodles (about 10 noodles)
15 oz whole milk ricotta cheese
½ cup freshly grated Parmesan cheese
½ cup freshly grated Romano cheese
½ cup freshly grated Asiago cheese
½ cup freshly grated mozzarella cheese
2 tablespoons Italian seasoning
2 large eggs
1½ cups Italian breadcrumbs or panko
2 tablespoons olive oil
½ cup finely grated Parmesan cheese

Boil lasagna noodles according to package directions until al dente. Drain and rinse with cold water so they are easy to handle. If the noodles have ribbon edges, trim them off for smoother rolling.
In a medium bowl, mix ricotta, Parmesan, Romano, Asiago, mozzarella, Italian seasoning, and eggs until smooth and well combined.
Lay noodles flat and spread an even layer of cheese mixture over each noodle. Roll tightly into 2–3 inch rolls.
Place the rolls on a parchment-lined tray or container so they don’t touch. Freeze for 1–2 hours until firm. This helps them hold their shape during breading and cooking.
Whisk eggs in one bowl. In another bowl, combine breadcrumbs, Parmesan cheese, and olive oil.
Dip each frozen roll into egg, then coat well in the breadcrumb mixture.
Preheat the air fryer to 375°F (190°C). Lightly spray the basket with oil.
Place lasagna fritta in a single layer and spray the tops lightly.
Cook for 7–8 minutes, flip carefully, spray again, and cook another 7–8 minutes until golden and crispy.
Serve hot with warm marinara sauce, Alfredo sauce, or both.
