  • 2 boneless, skinless chicken breasts (56 oz each), or 4 thin-sliced chicken breasts

  • 2 cups seasoned Parmesan breadcrumbs

  • 2 large eggs

  • ½ teaspoon kosher salt

  • ¼ teaspoon ground black pepper

  • Olive oil spray (non-aerosol)

  • Shredded Parmesan cheese

  • Lemon wedges

  • Fresh parsley, chopped

  • Red pepper flakes

  • Hot sauce

Instructions

  1. Prepare the Chicken
    Slice each chicken breast in half lengthwise like a book to make thinner pieces. Pat dry with a paper towel. If needed, gently pound the chicken so each piece is even in thickness.

  2. Bread the Chicken
    Place breadcrumbs in a shallow bowl. In another bowl, whisk the eggs with salt and pepper.
    Dip each chicken piece into the egg mixture, then press firmly into the breadcrumbs until well coated.

  3. Air Fry
    Preheat the air fryer to 390°F (200°C). Lightly spray the basket with olive oil spray.
    Place chicken in a single layer (cook in batches if needed). Spray the tops lightly with oil.
    Cook for 6–7 minutes, flip carefully, spray again, and cook for 4–5 more minutes, until the internal temperature reaches 165°F (74°C).

  4. Serve
    Let the chicken rest for 5 minutes, then slice and serve. Finish with lemon juice, extra salt and pepper, and your favorite toppings.

Notes

  • Thin chicken cooks better: Even thickness helps the chicken cook evenly and stay juicy.

  • Don’t overcrowd the basket: Space allows hot air to circulate and makes the chicken crispier.
