1 cup (226 g) unsalted butter, softened but still cool
1 cup (200 g) granulated sugar, divided
¾ cup (150 g) for dough + ¼ cup (50 g) for rolling
2 cups (240 g) all-purpose flour
Prep
Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper.
Cream Butter & Sugar
In a mixing bowl, beat butter and ¾ cup sugar on medium speed for 3–4 minutes, until light and fluffy.
Add Flour
Mix in the flour on low speed until a dough forms.
Dough should be tacky but not overly sticky.
If too dry, add 1 tbsp milk OR if too sticky, add 1 tbsp flour at a time (up to ¼ cup).
Shape Dough
Scoop dough using a 1 tbsp scoop and roll into smooth balls.
Coat in Sugar
Roll each dough ball in the remaining ¼ cup sugar.
Place on lined baking sheets about 2 inches apart.

Bake
Bake 12–14 minutes, until edges are set and just turning golden.
Cool
Let cookies cool on the baking sheet for 10–15 minutes, then transfer to a cooling rack.
Do not overbake — centers should stay soft.
Best sprinkles to bake with: jimmies — nonpareils may bleed color.
