1½ cups (190 g) self-rising flour
1 cup (250 ml) Greek yogurt
Neutral oil (vegetable or canola), enough to fill pot ~3 inches deep
¼ cup (50 g) granulated white sugar
2 teaspoons ground cinnamon
Pour oil into a heavy-bottomed pot, about 3 inches deep.
Heat to 350°F / 180°C over medium-high heat.
In a bowl, mix self-rising flour and Greek yogurt until a sticky dough forms.
Turn dough onto a floured surface and knead gently for about 1 minute, until it comes together.
Pinch off pieces of dough (about 1 tablespoon each) and roll into small balls.
Test the oil by frying one donut first.
Fry donuts in batches for 2–3 minutes, turning occasionally, until puffed and golden brown.
Remove with a slotted spoon and drain briefly on paper towels or a wire rack.
While still warm, toss in cinnamon sugar if desired.
If dough is too sticky, sprinkle a little more flour as you knead.
Don’t overcrowd the pan — too many donuts drops oil temperature.
